1/3 cup brown sugar
1/4 cup paprika
3 TBS chili powder
2 TBS black pepper
1 TBS ground cumin
1 TBS garlic powder
1 TBS cayenne (or less to taste - I substitute a teaspoon of chipotle powder)

Directions:
Directions:
Mix fresh and put in a shaker with large holes; cap tightly and store any remainder for use later.

Sprinkle on both sides of your beef or pork with vinegar and a touch of olive oil and let marinate for 3 - 4 hrs or overnight is even better.
