•3 tablespoons pineapple gelatin mix
• 3/4 cup sugar
• 2 tablespoons cornstarch
• 1 cup water
• 1 (20-ounce) can pineapple tidbits, drained
• 1 cup finely shredded sharp Cheddar cheese
• 1 cup butter-flavored cracker crumbs (like Ritz)
• 2 tablespoons butter, melted

•Preheat oven to 350 degrees F. Coat an 8-inch square baking dish with cooking spray.
•In a medium saucepan over medium-high heat, whisk together gelatin mix, sugar, cornstarch, and water until smooth. Bring mixture to a boil and continue to whisk until thickened. Stir in pineapple chunks and cheese. Pour mixture into baking dish.
•In a medium bowl, combine cracker crumbs and butter. Sprinkle over pineapple mixture.
•Bake 30 to 35 minutes, or until golden brown and heated through.
