30 mL 2 T Margarine
30 mL 2 T Sweetener
Dash Molasses
30 mL 2 T Vanilla or Table Syrup
4 slices canned sliced Pineapple, drained
2 Maraschino Cherries, cut in 1/2
310 mL 1 1/4 cup Flour
7.5 mL 1.5 tsp Baking Powder
2.5 mL 1/2 tsp Salt
75 mL 5 T Margarine, softened
60 mL 1/4 c Splenda
1 Egg
5 mL 1 tsp Vanilla
125 mL 1/3 cup Milk

Directions:

1. Preheat oven to 350* F. Prepare 8" X 8" pans
2. Melt margarine, and add to pan, sprinkle with 1st amount of sweetener and drizzle with molasses and syrup.
3. Arrange pineapple slices with cherries in centre on top of syrup.
4. Whisk dry ingredients together in medium bowl.
5. In another medium bowl, beat margarine with sweetener until blended. Add egg and vanilla and beat until light.
6. Add 1/3 of the dry ingredients and mix on slow speed until incorporated.
7. Add half the liquids and mix until smooth
8. Alternate dry with liquid ingredients
9. Spread batter on top of pineapples and syrup.
10. Bake until golden brown, 30 - 30 minutes.
11. Remove from oven and cool 15 minutes in pan.
12. Cut around cake, pressing knife against the cake tin.
13. Turn cake over onto cooling rack and allow to cool completely
