4 T butter
2 medium onions. Chopped
4 cloves of garlic, chopped
2 ribs celery, chopped
2 large bell peppers, chopped
1- 14.5 oz. can diced tomatoes
2 bay leaves
coarse salt and black pepper to taste
cayenne pepper to taste
hot sauce to taste
l lb shrimp, peeled and deveined

Directions:
In a large, heavy pot, cook onions, garlic, celery and bell peppers in the butter, stirring occasionally until softened, about 10 min.
Add the tomatoes & juice, bay leaves, salt, peppers and hot sauce.
Cook 10 min, stirring occasionally.
Add shrimp, and cook, stirring occasionally, until the shrimp turn pink, about 5-7 min.
Serve over steamed rice.
