6 to 8 pounds potatoes, grated
1 whole chicken or fowl
8 or 9 onions
4 bacon slices, optional
Salt and pepper to taste

Directions:
Boil chicken and onions in two quarts of water. Season with salt and pepper. Bone meat and set aside. Peel and finely grate the raw potatoes. Using a Rappie Pie Bag (or pillowcase) squeeze juice from the grated potatoes until quite dry. Measure liquid extracted and replace with equal quantity of chicken broth to be poured over the potatoes. Mix well. Place a layer of the potato mixture into a 13 x 9 inch pan, cover with the chicken, then top with remaining potatoes. Layer strips of bacon over top. Dot with butter and bake at 350° until brown. Reduce heat to 300° and bake until done. It may be necessary to add more broth or hot water during the cooking time. Cooking time approximately 1½ to 2 hours.
