3 squares Unsweetened Chocolate OR 1.5 oz Cocoa + 1.5 oz oil
750 mL 3 cups Flour
7.5 mL 1.5 tsp Baking Powder
5 mL 1 tsp Baking Soda
5 mL 1 tsp Salt
4 Eggs
750 mL 3 cups Sugar
375 mL 1 1/2 cups Oil
750 mL 3 cups grated Zucchini
5 mL 1 tsp Vanilla
250 mL 1 cups Chopped Walnuts

Directions:

1. Melt Chocolate and set aside to cool
2. Preheat oven to 350* F. Prepare pan(s)
3. Sift dry ingredients together
4. Beat eggs and sugar until light.
5. Pour in oil gradually and beat until thick and light
6. Add chocolate and vanilla
7. At low speed, beat in dry ingredients
8. Fold in Zucchini and nuts
9. Pour and spread batter evenly in cake pans and cook until done
