125 mL 1/2 cup Butter
250 mL 1 cup Sugar
2 whole eggs
1 egg separated (yolk in cake, reserve white for brushing on top)
15 mL 1 T grated orange rind
750 mL 3 cups Flour
12.5 mL 2.5 tsp Baking Powder
125 mL 1/2 cup sliced Almonds, toasted
180 mL 3/4 cup Red Cherries, chopped
180 mL 3/4 cup Green Cherries, chopped
For Topping:
5 mL 1 tsp Water
30 mL 2 T Sugar

Baking Part 1
1. Preheat oven to 350* F. Prepare baking sheet (grease or parchment paper)
2. Cream butter with sugar
3. Beat in eggs and yolk, one at a time.
4. Sift dry ingredients, and add to creamed mixture on slow speed.
5. Mix in fruit and almonds. Dough will be stiff.
6. Divide dough in half, and make into two loaves, 14" long and press to make 2 " wide.
7. Beat reserved egg white with water and sugar, and brush tops of loaves.
8. Bake about 25 minutes (will stiff be soft in middle.

Cool on cookie sheet on wire racks for about an hour

Baking part 2
1. Preheat oven to 325* F.
2. Cut cooked loaves diagonally in 1.25 cm 1/2 inch slices.
3. Lay slices on cookie sheets
4. Bake 10 minutes.
5. Turn slices over and return to oven to bake another 10 minutes until crisp and dry.
