2 cups diced apples (tart apples work the best)
1 tbsp. white sugar
1 tsp ground cinnamon
3 cups flour
3 tsp baking powder
1/2 tsp salt
2 cups white sugar
1 cup vegetable oil
1/4 cup orange juice
1 1/2 tsp vanilla
4 eggs
(optional 1 cup chopped walnuts)
(optional 1/4 cup caramel instead of apples or with apples)
1/4 cup confectioners' sugar for dusting

Directions:

Preheat oven to 350º F (175 º C)
Grease and flour 10-inch Bundt or tube pan
In medium bowl combine apples, 1tbsp sugar and 1 tsp cinnamon, set aside.
Sift together flour, baking powder and salt, set aside.
In large bowl beat eggs together (makes receipt fluffy) then add to eggs 2 cups sugar, oil, orange juice, vanilla, then beat at high until smooth.
Stir in flour mixture.
If desired add nuts.
Pour 1/3 of batter to prepared pan. Sprinkle with 1/2 apple mixture.
Alternate layers of batter and filling ending with batter.
Bake in preheated oven for 55 to 60 minutes or until top springs back when lightly touched.
Cool in pan for 10 minutes then turn out into wire rack or serving plate, cool completely.
Sprinkle with confectioners' sugar.
