4 large or 5 medium cucumbers, peeled and sliced
5 large slightly firm tomatoes, cut into bite sized pieces (can be peeled if desired)
1 medium yellow onion, quartered and sliced
1/2 c. canola oil
1/2 c. distilled white vinegar
2 tbsp. sugar
salt and pepper to taste.

In a small bowl, whisk together oil, vinegar, sugar, salt, and pepper. Place sliced vegetables in a large bowl. Drizzle dressing on top and stir to combine. Adjust salt and pepper if needed. Refrigerate several hours until well chilled, stirring occasionally to distribute the dressing. Notes: Red wine vinegar will work as a substitution, but not cider vinegar. You want the dressing slightly on the sweet side; it will be balanced by the flavor of the onion. This tastes better the longer it sits, so I always make it at least a day in advance. Serves 6-8.
