Ingredients:  
Meat seared over med high
Aromatics like shallot, garlic, spices like peppercorn, mustard seed
Liquid to deglaze like wine, broth 1/2 c., fresh herbs, lemon zest
Fat like butter
Salt and pepper
Lemon juice optional

Directions:
Directions:
After searing and cooking meat, set aside to rest.
Pour off fat, heat down to med and add aromatics and cook about 4 min.
Deglaze with liquid and simmer until reduce by half about 5 min or so
Add butter or other fat and swirl. Season with salt and pepper
Lemon juice if desired
