Butter Pecan Blueberry Buckle Recipe

Ingredients: ½ cup( 1stick) Land O Lakes butter 1 can refrigerated Pillsbury Cinnamon Rolls (eight rolls) with Cream Cheese Icing One large Eggland brand egg ½ cup Pillsbury Best Flour 2 Tablespoons Pillsbury Best Flour ¼ cup brown sugar ¼ cup Fishers chopped pecans ¼ cup Smuckers Caramel Topping 1 cup fresh blueberries(may substitute with 1 cup frozen blueberries) ½ teaspoon vanilla Crisco non stick cooking spray

Directions:1. Heat oven to 375° spray 8” x 8” x 2” baking dish with Crisco nonstick oil.
2. Melt ¼ cup butter in small saucepan Add ¼ cup caramel topping to butter, and bring to a boil removing immediately from heat Allow caramel butter to cool 10 minutes. In a small bowl beat egg and 2 tablespoons flour with a wire whisk until smooth.Add caramel butter mixture to flour/egg mixture and mix well.
3. Cut each cinnamon roll into four quarters making a total of 32 pieces and place in a medium-size mixing bowl. Gently fold the caramel butter mixture and the cinnamon rolls with a rubber spatula coating all the cinnamon roll pieces. Add the roll mixture to baking dish forming a single layer. Rinse fresh blueberries and drain on a paper towel(if using frozen blueberries make sure they are completely thawed ) Evenly distribute the blueberries on top of the caramel roll mixture
4. Prepare the streusel topping as follows: blend with a a pastry cutter 1/4 cup cold butter. ¼ cup brown sugar and 1/2 cup Pillsbury all-purpose flour until crumbly. Add 1/4 cup chopped pecans. Cover blueberries and roll mixture with streusel topping
5. Bake for 27 to 30 minutes or until lightly browned.Cool for 10-15 minutes .
6. Mix cream cheese icing with 1/2 teaspoon vanilla in small bowl and microwave for 12 seconds. Drizzle icing over warm Buckle. Cut into squares and serve. Makes about 9 servings.
