Ingredients: Chocolate Peanut Butter version: 6 oz (1 cup) chocolate chips 6 oz (1 cup) butterscotch chips 1/2 cup butter 1 cup peanut butter 1 pkg mini-marshmallows (rainbow or white)
Peanut Butter Rainbow Marshmallow version: 12 oz. (2 cups) butterscotch chips 1/2 cup butter 1 cup peanut butter 1 pkg. (3 to 4 cups) rainbow mini-marshmallows 1/4 cup shredded coconut (optional)

Directions:In a heavy medium sized saucepan melt all the ingredients, except for the marshmallows (and coconut if using) over medium heat. Remove from the heat and cool slightly and then fold in marshmallows (and coconut). Spread into a 9 X 13 inch pan and refrigerate until firm. Cut into squares. If you line the pan with parchment the squares will be easier to cut and to remove from the pan. |

Notes: A 10 ounce package of mini marshmallows equals about 4 cups. If you want thicker squares use a 9 X 9 inch pan. Stephanie's original version can be made with white marshmallows. Linda added the Peanut Butter Rainbow Marshmallow version as she and Brenda prefer it.
