Ingredients:  
Smoked sausage
1-2 onions, chopped
1 Bunch of Parsley
1 -2 Green peppers

¾ c cooking oil
1 c flour in skillet

2 c. raw rice
Salt, pepper, garlic

3-4 c. water….

Add more water until even with ingredients.

Directions:

Sliced Smoked sausage & little oil….. Brown in deep pot then brown the next three ingredients.

Cut up: 1-2 onions
1 Bunch of Parsley
1 -2 Green peppers
Saute…..with sausage….

Add roux…. Mix ¾ c cooking oil &1 c flour in skillet and cook slowly on slow to medium heat stirring constantly until caramel brown. Add to large pot with sausage & sautéed vegs.

Then add:

2 c. raw rice
Salt, pepper, garlic

3-4 c. water…..Pour in pan with rice.

Add more water until even with ingredients.

Cover and let cook.

Stir often. Simmer until tender and done. Add water when necessary.
