1 1/2 pound lean ground beef
1 small can tomato paste
2 eggs (beaten)
1 /4 cup gluten free catsup
1/4 cup finely chopped onion
1 slice gluten free bread, ground to crumbs
1 tbsp. prepared mustard
1 tbsp. horseradish
1/2 tsp. salt
1/4 tsp. pepper
optional - dash chili powder, cumin, and/or seasoning salt - to taste.

Mix ingredients well,.
Bake in meatloaf pan - well greased for 1 - 1 1/2 hours at 300 º F. If meatloaf pan is not available use regular loaf pan.
Can be made ahead, and stored in fridge until you are ready to bake it.

A meatloaf pan is just a loaf pan with an insert that has holes in the bottom and allows the excess fat to drain away from the meatloaf as it is cooking. Linda says that in Kelowna it is sometimes possible to buy gluten free bread crumbs.
