1/4 lb. swiss cheese grated
6 slices Canadian bacon, finely diced
3 Tbsp. snipped chives
8 eggs
black pepper
2 Tbsp. melted butter

Directions:
Directions:
Pre heat oven to 375º. Mini muffin pans for 24 mini breakfast muffins. Spray with Pam or brush with butter.
Mix together cheese, bacon, chives and a few grinds of pepper. In a bowl, beat the eggs.
Using a teaspoon, put cheese/bacon mixture in each muffin cup. Should fill about 1/2 full. Pour or spoon on the beaten eggs to just below the edge of the tin. Bake until golden, about 12 minutes. Serve while warm.

These are cute and tasty. Great for brunch buffet, or showers, etc. Could be made in regular size muffin tins for more of a breakfast size.
