Ingredients:  
1 small diced onion (approximately ¼ cup)
2 cans (15-16 ounces each) Great White Northern Beans – drained
4 cups of Chicken Broth
1 16 ounce Pace Salsa (I use Medium)
2 pounds of diced or shredded cooked chicken (preseasoned or broasted is best!)
1 heaping Tablespoon of Cumin
¼ tsp. black pepper
16 ounces of Monterey Jack (the Kraft with the hint of cream cheese melts the best…)

Directions:
Directions:
1. Combine all ingredients EXCEPT the Monterey Jack in a slow cooker and let it come together for hours. (I literally put this together at 6:30am with frozen cooked chicken and let it go until 6pm on low in my crock pot.)
2. About 30 minutes prior to eating, add the shredded Monterey Jack and allow to melt for about 10-15 minutes.
3. Stir or whisk together and enjoy!
(Goes really well with crusty Italian!)
