3 - 4 lbs. Short Ribs

3-4 large carrots, peeled and sliced

2 stalks celery, sliced

1 small turnip ,peeled and cut up

2 parsnips, peeled and sliced

1 leek , washed and diced

3 large potatoes, peeled and cubed

1 large onion, chopped

3 - 4 sprigs of parsley minced

2 sprigs of fresh dill, chopped

1 large can of tomatoes diced

Season ribs with salt and pepper and place in a Dutch Oven with hot oil. Brown well on all sides.

Add onion and sauté until translucent.

Add carrots , celery, parsnips, turnip, parsley and dill.

Cover with water and simmer for about 2 hours.

Add potatoes and cook for another half hour or until they are soft

Remove from heat and place in the refrigerator until the fat hardens and can be removed with a slotted spoon.

Return pot to the stove and add the tomatoes.

Heat thoroughly and enjoy.

You can either serve the short ribs whole or cut the meat from the bone and add as bite sized pieces. Goes great with some crusty rye bread!
