2 eggs, slightly beaten
2 c. sugar
1/2 c canola or vegetable oil
1 c. canned pumpkin
2 1/4c. flour
1 tsp. pumpkin pie spice
1 tsp. baking soda
1/2 tsp. salt
1 c. chopped cranberries or craisins

Directions:
Directions:
Combine eggs, sugar, oil and pumpkin and mix well In a large separate bowl, combine flour, pie spice, soda and salt. Make a well in the center and pour pumpkin mixture into the dry ingredients. Stir until moistened. Stir in cranberries. Spoon batter into greased and floured (PAM actually works better-no flour needed) 8x3 3/4x2 1/2 inch loaf pans. Bake at
350º for one hour or until toothpick inserted in center comes out clean. Tastes great plain, with butter or cream cheese.
