2 1/4 c. flour
1tsp. baking soda
2 tsp. ground cinnamon
1 1/2 tsp. ground cloves
1/2 tsp. nutmeg
1/2 tsp. ground ginger, I add more, about 1 tsp.
1 c. brown sugar, packed
1/4 c. vegetable oil
1/3 c. molasses
1 egg
1 1/4 c. chopped crystallized ginger. This can be expensive. I think you can use slightly less than called for.

Preheat oven to 350º. Line 2 cookie sheets with parchment paper.
Sift flour, soda, cinnamon, cloves, nutmeg and ginger. In the mixer, beat brown sugar, oil, molasses, for 5 minutes. On low, add egg and beat 1min. Still on low, add the dry ingredients and mix on medium for 2 minutes, scraping down sides often. Add the crystallized ginger. and mix.
Use a small scoop to form balls about 1 - 1 1/2 inches in diameter. Roll in sugar. Place on cookie sheet. Using a glass dipped in sugar, flatten cookie balls slightly.
Bake for 13 minutes. Cookies will be cracked on top and soft inside. Cool on sheet pan for several minutes and transfer to a rack.
