2 cups sugar
1 cup water
1 cup light corn syrup
1 tsp salt
2 cups raw Spanish peanuts
1 tsp butter
1 tsp vanilla
1 tsp baking soda
1 pkg. raw coconut (about 2 or 2 1/2 cups)

Directions:
Directions:
Combine sugar, water and syrup in a heavy skillet. Cook stirring constantly until sugar dissolves. Add salt and peanuts. Cook stirring occasionally to hard crack stage - 294ºF. Add butter, vanilla and baking soda. Stir in coconut and put on two buttered cookie sheets. While still warm, pull apart to thin as much as possible. When cold, break into pieces.

Store in airtight container.

Family favorite! Dad used to help Mom "pull" the candy to thin it. I can hear Mom giggling as they worked the candy. Good memories.
