1 can black beans drained
1 can corn drained
1 can diced potatoes
1 chopped onion
1 packet of enchilada sauce dry mix
2 cup water
1 14.5 oz. tomato sauce
1 can Cream of Chicken Soup
2 cup skim milk
2 boneless skinless chicken breasts

Directions:
Directions:
Mix Enchilada packet with water and tomato sauce. Add cream of chicken soup and milk, whisk all ingredients together until smooth. Place chicken in bottom of crock pot. Add onions, drained corn and black beans. Pour tomato sauce mixture on top. Cook in slow cooker on low for 6-8 hours. Shred chicken with a fork at the end.

Serve with any or all of the following: tortilla chips, avocado, lime juice, sour cream, and/or shredded cheddar cheese.
