Directions:In a small bowl, dissolve the yeast into the warm water; set aside for 15 minutes. In a large microwavable bowl, warm the milk. Add the sugar, salt, butter and lemon rind; mix well. Add the beaten eggs and yeast mixture; beat well. Add the flour slowly by hand. Turn the dough out onto a floured board and knead, adding more flour if needed. When the dough is smooth and elastic, place it into a large greased bowl. Cover with a dish towel and let it rise until doubled. Punch it down and let rise again until doubled. Turn out onto a lightly floured surface and divide in half. You can make all kinds of shapes or braids with this dough. Be creative. When finished, place them on a parchment-lined baking sheet and cover with a dish towel. Let rise for 30 minutes. When ready, brush the dough with a beaten egg and sprinkle the colored sprinkles on top of each loaf. Bake in a preheated 375º oven for 15 to 20 minutes. |

Notes: I first tasted this bread at my son's preschool. One of the assistants, Ellen, was a wonderful older German woman. She made the bread during class for an Easter activity. It was the most delicious bread I had ever tasted. She was kind enough to give me the recipe, and I use it for all the holidays. It is my Greek New Year's bread, my Italian Easter bread and my German Christmas bread. I may tweak it a bit and add a little of this or that for the different holidays, but it always turns out light, buttery, sweet and delicious!
