2 c. elbow Macaroni, Large or Large shells
1/4 c. butter
1/4 c. flour
2 c. milk
1/2 lb. (8 oz) Velveeta cheese, cut into cubes
1 c. shredded sharp cheese, divided
2 c. fresh Broccoli florets, cut small
1/2 c. French Fried Onion Rings

Directions:
Cook the macaroni as directed, no salt add. Rinse and drain well. While the macaroni is cooking go ahead and steam the Broccoli. Melt butter in a sauce pan on medium heat. Whisk in flour, cook 2 minutes stirring constantly. Slowly stir in the milk, bring to a boil.Cook and stir until thickened 3-5 minutes. Add the Velveeta, half of the cheddar and all of the broccoli. Mix well. Add the pasta, stir, coating the pasta with the cheese mixture. Spray an 8 x 8 baking dish with cooking spray. Add the mixture. Top with the rest of the cheddar and layer on the onion rings. Bake at 350º for 20 minutes or until heated through and the cheese is melted and bubbly.
