2 or 3 green peppers
12 lbs green tomatoes
4 onions
1 cup salt
3 quarts vinegar
4 cups sugar
1 teaspoon ground ginger
1 teaspoon cinnamon
2 tablespoons mustard seeds
1/2 cup grated horseradish

Remove seeds from peppers. Chop all vegetables very fine. In large pan, arrange vegetables in layers, sprinkling each layer with salt. Let stand overnight.
Drain, add remaining ingredients. Cook until tender, stirring occasionally.
Pour mixture into hot sterilized jars and seal. Store in a cool place.
Makes 12 pints
