1/2 cup Crisco Shortening
1 cup sugar
1 egg
1/2 cup milk
grated rind from 1/2 lemon
2 1/2 cups flour
1/4 tsp. salt
2 1/2 tsp. baking powder
1 cup fresh blueberries

Directions:
Directions:
In a medium bowl, cream the shortening and sugar together. Add the egg; beat well. Slowly add the milk and grated lemon rind. Sift the flour, baking powder and salt together. Slowly add it into the first mixture. Blend well by hand. Add the fresh blueberries, being careful not to mix too hard. Using a spoon, drop a heaping tablespoon of dough onto parchment-lined cookie sheets. Bake in a preheated 350º oven for 10 minutes or until golden brown. Don't over bake, these cookies are supposed to be soft and cake-like.

We found this recipe tucked away in a folder with other handwritten recipes from the 1950's. It looked very interesting, since we had never seen a cookie recipe with fresh blueberries. Mary made them the next day. They were light, almost like a muffin top and so refreshing!
