4 cups minced leftover turkey or chicken
1/4 c finely chopped celery
2 tbsp. chopped onion
1 tbsp. salt
1/4 tsp pepper
3/4 to 1 c heavy whipping cream
2 eggs beaten
3 tbsp. water
Bread crumbs
1 quart vegetable oil

Directions:
Directions:
Combine chopped turkey, celery, onions and seasonings and just enough cream to moisten and bind together. Press into a well greased pan and chill thoroughly. Beat eggs and water together. Shape turkey mixture into croquettes or balls and roll in bread crumbs. Dip into egg mixture and then roll in crumbs again. Deep fry in vegetable oil at 375º for 3 to 4 minutes or until golden brown. Serve hot with a cream sauce.
