3 ripe bananas or enough to produce 1 cup when mashed
6 tbsp. melted shortening or vegetable oil
1/2 c sugar
1 tsp salt
1 egg well beaten
1 tsp vanilla
1 1/2 c all purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 c chopped walnuts (optional)

Directions:
Directions:
Mash bananas. Add shortening, sugar and salt. Beat until well mixed. Add egg and vanilla and beat again. You may do that much in your mixer if you like but no more. Sift flour, baking soda and baking powder over banana mixture. Stir in flour and add nuts with a few strokes of the spatula - again only enough to moisten. Drop spoonfuls into 18 buttered muffin tins and bake in a 350º oven 15-20 minutes.
