8 c bread (bread is to be plucked into smallish pieces)
2 c diced celery
2 c diced onions
1 c butter
1 c chicken broth
3-5 Tbsp poultry seasoning
1 Tbsp sage
salt & pepper

dressing bag (made out of cheese cloth)

Using a large skillet and med heat, melt butter. Careful not to brown the butter, just melt it.
Add onion and celery for 8-10 minutes.

To the bread crumbs, add the poultry seasoning, sage, salt and pepper. You probably need more seasoning then you think.

Add the seasoned break crumbs to the skillet and brown. Once the break mixture becomes dry, add the chicken broth.

Cool the mixture and fill the dressing bag. Insert in turkey and cook turkey.

Once you stuff the turkey with the dressing, you need to cook it immediately. This goes to the other end of the process. When the turkey is cooked, you immediately must remove the stuffing. Put it in a bowl and fluff up.

Chances are that you will make more stuffing than there is room inside the turkey. For the extra stuffing, make a foil package for the extra stuffing and cook it along side the turkey. Add this extra stuffing to the stuffing that you take out of the turkey. Fluff up the stuffing to incorporate the two batches.
