2 1/2 c sifted all purpose flour
2 tbsp. baking powder
2 tbsp. granulated sugar
1 tsp salt
1/4 cup shortening
1 c milk
1 c cooled mashed potatoes
1 tbsp. milk or cream

Directions:
Directions:
In a large bowl combine flour, baking powder, sugar and salt. Cut in shortening (coarse crumbs). With fork stir in milk and potatoes. Transfer to lightly floured surface, knead gently 8 to 10 times, working in a little extra flour if dough is too sticky. Place dough on ungreased cookie sheet, pat with hands to form a large oval about one inch thick. Brush with milk or cream and bake in 450º oven 15 to 20 minutes or until golden brown. Slice and serve with butter.
