Triple Chocolate Fudge Recipe

4 1/2 c. sugar
1/2 c. butter
1 12 oz. can evaporated milk
4 1/2 c. mini marshmallows
1 12 oz. bag chocolate chips
12 oz. milk chocolate (I prefer milk chocolate chips)
2 oz. unsweetened baking chocolate (2 squares) -- grated or cut into pieces
2 tsp vanilla

Line a 15"x10"x1" pan with foil, extending foil over sides. (I use two 8x8 pans instead). Grease foil.

In a 5 to 6 qt. saucepan cook sugar, butter, and evaporated milk over medium heat, stirring constantly until sugar is dissolved. Heat to full boil, stirring constantly. Boil uncovered over medium heat without stirring for 5 minutes.

Remove saucepan from heat. Add marshmallows and stir until melted. Add all chocolate, stirring constantly until all chocolate is melted and mixture is smooth. Stir in vanilla and any optional ingredients and quickly spread mixture in the foil lined pan.

Cool completely (about 1 1/2 hours)

Remove fudge from pan by lifting foil. Remove foil from sides of fudge and cut fudge into squares with a long knife.

Optional ingredients:
Peanut butter fudge: Add 1 c. candy coated peanut butter pieces and 1 c. chopped peanuts

Candy fudge: Add 1 1/2 c. candy coated chocolate pieces.

You can also add 1 c. chopped walnuts or pecans and 1/2 tsp almond extract.
