7 3/4 oz can salmon
3 tbsp. mayonnaise
1 tbsp finely minced green onion
1 hard-cooked egg chopped
1/4 c finely chopped celery
1/4 tsp salt
Dash pepper
Dash cayenne
Butter for bread
6 slices bread
Milk
1 egg
1/4 c butter for skillet

Directions:
Directions:
Drain salmon and save liquid. Flake salmon and combine with mayonnaise, onion, hard-cooked egg, celery, salt, pepper and cayenne. Butter bread and spread salmon mixture on half the slices. Top with remaining slices. Measure salmon liquid and add enough milk to make 1/4 cup. Beat this liquid and egg together lightly in a flat dish. Heat butter in large heavy skillet. Dip sandwiches quickly into egg mixture so each side is moistened but not soaked. Brown slowly in hot butter, turning once. Serve immediately.
