2 1/2 cups all purpose flour
2 T sugar
1 1/2 t salt
3 t baking powder
1 t baking soda
2 large eggs separated
2 cups buttermilk (alternative; make sour milk with 2 cups milk and 2 T vinegar or lemon juice - another alternative 1&1/2 cup plain yogurt with 1/2 cup milk in place of buttermilk)
1/2 cup milk
10 T unsalted butter, melted and cooled
optional to add 1/2 t to 1 t vanilla
canola or peanut oil for frying

Heat oven to 225

1. Combine and mix dry ingredients, flour, sugar, salt, baking powder and baking soda in one bowl
2. In a smaller bowl whisk together egg yolks, buttermilk and milk; then add cooled butter and whisk until well combined.
3. Mix the wet ingredients into the flour mixture until barely combined.
4 Beat the egg whites till fluffy (this can be done with a wire whisk or hand mixer)
5. Fold the egg whites into the batter gently and just until combined (the air bubbles in the egg white will give the pancakes their fluffy texture)
6. Set the batter aside for at least 5 minutes before cooking

7. Heat skillet over med-hi heat; when hot film with 1/2 t oil. After about 30 seconds, when oil shimmers but not smokes, lower heat to med-low and use a soup spoon to drop in heaping spoonfuls of batter.
8. Cook about 2.5 minutes - when bubbles form on top it is time to turn with a thin spatula. cook on second side for approximately 2.5 minutes till golden brown done.
9. Place cooked pancakes from skillet to oven until ready to serve.
