1/2 cup onion, finely diced
1/2 cup tomatoes, cored, seeded, diced
2 1/2 lbs Land O'Lakes hot pepper cheese
2 oz (1/4 cup) chopped spinach
1 1/2 cup milk

*Land O'Lakes cheese melts the best for this dip

Directions:
Dice onion. Dice tomatoes. Place spinach in mesh strainer. Press or squeeze to remove liquid. Shred or cut cheese into smaller pieces so it melts faster. Use double broiler and heat milk. Add cheese to milk and stir constantly. When cheese is melted, remove from heat. Fold in onions, tomatoes and spinach. Stir to combine. Serve warm with tortilla chips. If bringing to a party, heat in 250 degree oven for 10-15 minutes before serving. Once heated, a crockpot can be used on warm (not low) setting to keep the dip ready for serving.
