•1/2 pound lean ground turkey breast
• 1/2 red bell pepper, diced
• 1/2 cup diced onion
• 1/8 teaspoon salt
• 1/8 teaspoon black pepper
• 4 egg whites
• 3 eggs
• 1/4 cup skim milk
• 1 teaspoon dry mustard
• 1/2 teaspoon garlic powder
• 2 cups spinach

Directions:

•Preheat oven to 375 degrees F. Coat an 8- x 8-inch baking dish with cooking spray.
•Coat a skillet with cooking spray and cook over medium heat the turkey, bell peppers, onions, salt, and black pepper for 4-5 minutes, or until turkey is no longer pink. Set aside.
•In a large bowl, whisk the egg whites, eggs, milk, dry mustard, and garlic powder. Stir in spinach and meat mixture. Pour into baking dish.
•Bake 30-35 minutes, or until egg is set. Cut into squares and serve immediately.
