1 cup flour, sifted
1/8 tsp. salt
1/2 cup butter, softened
3 tbsp. powdered sugar
1 cup pecans, finely chopped
1 tsp. vanilla extract
assorted jams or jellies

Directions:
Directions:
In a large bowl, cream butter and powdered sugar until well-blended; add vanilla. Stir in sifted flour and salt; blend well. Stir in pecans by hand, mixing to make a soft dough. Chill dough overnight or until firm enough to handle. Roll the dough into 1 1/2-inch balls and place 2 inches apart on a parchment-lined cookie sheet. Make a well in the center of each cookie with the end of a wooden spoon handle. Fill with about 1/2 teaspoon jam or jelly. Bake in a preheated 300º oven for 8 to 10 minutes or until golden brown.

This was another one of our mother's favorite holiday cookies. It was an old recipe, passed down from one generation to another... and you know what they say, "Sometimes older is better!"
