Ingredients: ¼ cup meat drippings 3 Tablespoon flour 2 cups chicken broth (substitute milk if you want white gravy) Salt / Pepper to taste Dash of hot sauce if you want a little heat 1/2 Teaspoon Kitchen Bouquet OR Gravy Master if no drippings to add flavor

Directions:Reserve some drippings about ¼ cup from your roasted meat. Make a roux - Whisk equal flour/ pan drippings in pan; mixture will seem dry. Add 2 tablespoons reserved fat, or as needed, to the drippings mixture to combine with flour. Stir constantly over low heat to toast flour mixture until brown about 5 -10 minutes. If you burn it- start over. Add chicken broth a little at a time into the pan, whisking each addition until well combined. Scrape pan drippings from the bottom of the pan into gravy; bring to a simmer. Continue whisking until gravy is thick and combined 8 to 10 minutes. Add more broth if too thick. Add salt, pepper and hot sauce to taste. |

Notes: Growing up, every holiday the family would get together. Auntie Helen always made the Turkey gray. She would get in the kitchen, spoons stirring and eventually smoke rising. The gravy pan would put off smoke and before you know it, the kitchen was cloudy and someone would run and get the kitchen towel to fan the smoke alarm. It never failed, the smoke would rise but that was the best gravy ever.
