3 tbsp. flour
2 tbsp. oil
1½ pounds smoked sausage, cut into ½ inch slices
2 cups okra, cut up, fresh or frozen
1 large onion, chopped
1 large green bell pepper, chopped
3 cloves garlic, minced
¼ tsp. ground red cayenne pepper
¼ tsp. pepper
2 cups diced tomatoes
1 pound frozen shelled deveined cooked medium shrimp
1½ cups uncooked regular long-grain white rice
3 cups water

Directions:
Directions:
In a small saucepan, combine flour and oil, mix well. Cook, stirring constantly, over medium-high heat for 5 minutes. This is your roux. Place roux in a 4 quart crockpot. Stir in all remaining ingredient except shrimp, rice and water. Cover, cook on low setting for 4-6 hours. When ready to serve, cook rice in water as directed on package. Then add shrimp to gumbo mixture and stir well. Cover and cook an additional 20 minutes. Serve gumbo over rice.
