2 cups sugar
4 large eggs
½ cup oil
2 tsp. cinnamon
1 tsp. vanilla
2½ cups flour
½ tsp. each: baking powder,
baking soda and salt
2 cups unpeeled, shredded zucchini

CREAM CHEESE FROSTING

½ stick margarine
1 - 3 oz. package cream cheese
1 tsp. Vanilla
2 cups powdered sugar
½ cup finely chopped nuts

Directions:
Directions:
Heat oven 350º, lightly grease a
11" x 17" jelly roll pan.
Beat eggs, sugar, oil, vanilla, cinnamon,
baking powder, baking soda and salt
in large bowl. Mix until well blended
with mixer on low speed, gradually
beat in flour, just until blended.
Stir in zucchini. Spread in prepared
pan. Bake 25 to 30 minutes until
A toothpick inserted comes out clean.
Cool completely on wire rack.

CREAM CHEESE FROSTING

Beat margarine, cream cheese, & vanilla until
smooth, gradually add powdered sugar.
until well blended. Spread on cooled bars,
Sprinkle with nuts. Cut in squares.
