1/2 stick. butter
1 chopped onion
2 thinly sliced onions
6 cups beef broth
1 tsp. salt
1/2 tsp. pepper
1 bay leaf
1/2 tsp. thyme (or fresh sprig)
croutons
sliced Swiss cheese

Directions:
Directions:
Put onions, butter and salt into crockpot. Cover and cook on high 6-7 hours, until onions are soft and brown. Add broth, bay leaf, thyme and pepper. Cover and cook another hour. Remove bay leaf and stir. Spoon soup into bowls and top with croutons and cheese. Allow to sit for a few minutes to melt cheese before serving.
