Dirty Rice Recipe

3 tbsp. vegetable oil
1 lb of chicken gizzards, chopped
½ lb of pork sausage, remove casings and crumble
1 cup finely chopped yellow onion
¾ cup finely chopped green bell pepper
¼ cup finely chopped celery
2 tsp. minced garlic
1 tbsp. Creole seasoning
1 tsp. salt
1 tsp. ground black pepper
1 can of chicken broth
2 bay leaves
5 cups of cooked rice
¼ cup chopped green onion

Directions:
Directions:
In a large sauté pan, heat 2 tbsp. of vegetable oil over medium-high heat. Add the chicken gizzards and sausage and cook, stirring until the meat is browned, about 6 minutes. Add the remaining tbsp. of oil, the yellow onion, bell pepper, celery, garlic, Creole seasoning, salt & pepper and cook stirring for about 5 minutes. Add the chicken broth and bay leaves and scrape the bottom of the pan to loosen any browned bits. Bring to a boil, then lower the heat and simmer for 5 minutes. Add the rice and stir thoroughly. Cook until the rice is heated through. Remove from the heat and remove the bay leaves, stir in the green onion.

I know some of yall are going to gag at the gizzards but that is what really sets it off. Boil and rinse them and then chop them in a food processor before browning.
