8 potatoes about 2 ½ to 3 pounds, peeled
1 cup evaporated milk
½ cup sour cream
1 tsp. salt
½ tsp. black pepper
2 cups of shredded cheddar cheese
6 slices of bacon, cooked, crumbled. Turkey or pork works
sliced green onion-optional

Directions:
Directions:
Preheat oven to 350°. Boil potatoes for 20 minutes. In a mixing bowl add potatoes, evaporated milk, sour cream, slat & pepper. Mix until smooth. Stir in 1 ½ cup of cheese and half the bacon. Bake for 20 to 25 minutes, then top with remaining cheese and bake until cheese is melted. Sprinkle remain bacon and sliced green onion.
