1 lb. ground beef
1/2 lb. sausage meat ( Mix all ingredients and refrigerate overnight)
1/2 cup minced onion
3/4 cup Italian bread crumbs
1 Tbsp. snipped parsley
1 tsp. salt
1/4 tsp pepper
1 tsp. Worcestershire sauce
1 egg
1/2 cup milk


Sauce ingredients:

8 0z. baby bella mushrooms cut up
2 Tbsp butter
1 Tbsp. fresh garlic, minced
kosher salt to taste
generous grind of fresh pepper
2 Tbsp. flour
1 1/2 cups chicken or beef stock
1 cup half and half or heavy cream (don't use fat free, it won't thicken)
1 cup sour cream
generous splash of sherry
sprinkle of nutmeg

Directions:
Directions:
Shape meat into small meatballs and brown them in a little oil. Remove from pan and place on a rack on a cookie sheet in the oven to finish cooking. This gets rid of some of the grease. Don't over bake them.


Add butter, garlic salt and pepper and mushrooms to the pan. Cook and stir until the mushrooms soften and exude their liquid.

Stir in flour and cook about a minute.

Slowly add the stock and Sherry and bring to a simmer.

Add the cream and simmer stirring often until the sauce thickens, about 10 - 15 minutes.

Add the sour cream and stir to blend in.

Return the meatballs to the pot and heat through.

These measurements are approximate since I have never made such a small amount and don't really measure much of anything! I usually make these for a party or family gathering. It's pretty much 1 part sausage meat to 2 parts beef and everything else "to taste".
