2 tsp. vegetable oil
1 1/2 lbs. andouille sausage, cut into 2" pieces
4 C. water
1 (14.5 oz) can diced tomatoes
1 (8 oz.) bottle clam juice
5 tsp. Old Bay seasoning
1 bay leaf
1 1/2 lbs. small red potatoes, halved
4 ears corn, husks and silk removed, cut into 2" pieces
2 lbs. large shrimp

Directions:
Directions:
Heat the oil in a Dutch oven until smoking. Add sausage and cook until fat renders and sausage is browned, 5 minutes. Remove sausage. In the Dutch oven, add water, tomatoes, clam juice, 3 tsp. of Old Bay, bay leaf, potatoes and corn to boil. Reduce the heat to medium and simmer, covered; until the potatoes are just tender; (10 minutes.) Return the sausage to the pot. Toss the shrimp with remaining Old Bay (2 tbsp.) and transfer to a steamer basket and place on the top of the pot. Cook covered, stirring the shrimp until cooked through; (10 minutes.) Strain the liquid and remove the Bay leaf. Serve on a foil covered dish for everyone to help themselves.
