2 c. Flour
2 c. Sugar
2 tsp. ground cinnamon
1 tsp. baking soda
1/2 tsp. ground nutmeg
1/2 tsp. salt
2 c. Shredded Carrots
1 1/2 c. Oil
1 (8oz) can of crushed pineapple
3 eggs
2 tsp. vanilla
2 c. Chocolate chips

Directions:
Directions:
1. Preheat oven to 350ยบ. Grease 12 muffin cups or line with paper.
2. Whisk flour,sugar,cinnamon, baking soda, nutmeg and salt together in large bowl. Add carrots, oil, pineapple, eggs and vanilla and mix until batter is evenly combined. Fold in chocolate chips. Spoon into muffin tin.
3. Bake in preheated oven until tooth pick comes out clean. 15-30 minutes. Cool muffins for 20 minutes before serving.
