300 g 1 1/4 cup Sugar
300 mL 1 1/4 cup Oil
4 Eggs
500 mL 2 cups Flour
10 mL 2 tsp each Cinnamon, Baking Powder, Baking Soda
5 mL 1 tsp Salt
1 L 4 cups Grated Carrots, packed
125 mL 1/2 cup Chopped Walnuts

Directions:

1. Preheat oven to 375* F.
2. Grease and flour a 9 X 13 cake pan
3. Beat sugar and oil until foamy.
4. Whip in eggs and beat until 'au ruban'
5. Sift flour, leavening and spices together and fold into whipped egg mixture.
6. Fold in carrots and nuts
7. Pour and spread batter into pan
8. Bake 45 minutes to 1 hour.
9. Allow to cool 1 hour then remove from pan
