Oil for frying
1 cup yellow cornmeal
¾ cup self rising flour
1 tsp. salt
½ tsp. sugar
½ tsp. cayenne pepper
½ tsp. paprika
½ small onion, finely grated
4 green onions, thinly sliced
1 cup buttermilk
1 egg, beaten
¼ cup grated cheddar cheese

Directions:

Whisk the dry ingredients together in a large bowl to get rid of the lumps. Then mix the remaining ingredient, stirring well. Using a tablespoon, scoop up batter and carefully slide it in the hot oil. Fry the scoops of batter till they are golden brown, about 5 minutes. Remove and drain on a paper towel, season with salt as soon as they come out of the fryer.
