1 ¼ cups ground cornmeal
¾ cup flour
¼ cup sugar
1 tsp. salt
2 tsp. baking powder
½ tsp. baking soda
1 cup buttermilk
2 eggs, lightly beaten
8 tbsp. melted unsalted butter

Directions:
Directions:
Preheat oven to 425°. Place a 9 inch cast iron skillet in oven while you make the batter. Mix together cornmeal, flour, sugar, salt, baking powder and baking soda. Set aside 1 tablespoon of butter and put the rest in the cornmeal mix. Take the skillet out of the oven. Reduce the temperature to 375°. Coat the skillet with the rest of the butter and pour the batter in the skillet. Place back in the oven and bake for about 20 to 25 minutes, allow to cool a little and serve.
