2/3 cup water
1/3 cup quinoa, rinsed
2 cups black beans
2 cups salsa
1 cup crushed tortilla chips
2 tbsp. taco seasoning

Directions:
Directions:
In a small saucepan, boil water, add quinoa. Reduce heat; simmer, covered for 12-15 minutes or until liquid is absorbed. Remove from heat, fluff with a fork. In a large bowl, mash black beans. Add 1 cup of salsa, tortilla chips, taco seasoning and cooked quinoa; mix well. Shape mixture into eight ¼ inch thick patties. Grill, covered over medium heat until each side is heated through about 5 to 6 minutes.
