1 package frozen spinach thawed and drained 

1 ¼ cup red onion, julienned 

1 cup cherry tomatoes

3 tbsp. fresh garlic minced

2 tbsp. butter

2 tbsp. olive oil
Salt and pepper to taste 


Directions:
Directions:
In a heated skillet add 2 tablespoons butter and olive oil. Once butter has melted, sauté red onions till translucent. Add cherry tomatoes garlic and sauté a few more minutes. Add the spinach and stir till heated through, Salt and pepper to taste.
