1 package Pepperidge Farm puff pastry sheets
flour to roll out pastry sheet

Filling:
1 stick unsalted butter
2 - 3 tsps. flour
2 cups milk or cream
salt and pepper
3/4 sharp cheese (Sharp or Swiss)
3 eggs

Directions:
Directions:
Defrost 1 sheet of the Pepperidge Farm pastry sheets. In a saucepan, melt butter on low with 2-3 tsp. flour. Slowly add milk to butter and flour to create a roux. Add shredded cheese until melted, salt and pepper. Set aside and cool mixture. In a separate bowl, whisk 3 eggs. When sauce is cooled, add eggs.

Spray mini muffin tins with cooking spray. Rollout the pastry sheet into a thin layer. Using a small glass top, cut out round circles and put into a mini muffin pan. Fill with cheese sauce. Bake in a preheated 350º oven for 15 to 20 minutes or until tops are golden brown. Let cool in muffin tins for a few minutes before removing and placing on wire racks or wax paper.

A Christmas Eve favorite! I like to divide the sauce in 2 and add different cheeses to each half. The cheese tarts can be easily made ahead of time and frozen.
